    Hi again!
    I totally feel you on this post. Whenever I follow other people’s recipes word for word, the dish doesn’t turn out right, but if I use multiple recipes as mere guidelines, then follow my gut instincts it always turns out great.
    I think for some people it’s harder to cook like this though, either they aren’t in tuned with themselves or they simply are wired in different ways. I feel you though, for sure.
    I’m inspired to go to the bookstore and jot down notes like you did, that’s such a great idea!!! Thanks :)
    So, you’re a personal chef? That sounds great. I’m curious if you went to school to train/how you got into it.

      thank you for your comment, laura! i know its a bit risky to approach people with a “no-recipe” attitude but my private clients love to try new food all the time and not knowing what to expect when i arrive :-) i think i never made the same dish twice. i naturally want to invent and experiement to not get bored with techniques and ingredients. its so much fun and i still learn from my mistakes or simply different client requirements…eating more raw food opened up a whole new world for me and i am so excited trying new foods and flavour combinations every day. i never went to culinary school but i took classes at the NGI in new york and i have been working in restaurants, cafes, caterings etc the last years. it was a great experience but i dont see myself working in a restaurant kitchen. i love to engage with people and either cook for them individually or organize caterings, events, tasting menues … with friends or like-minded people. i am open for everything! food makes life so much more pleasant and enjoyable as long as u dont make a religion out of what you eat/dont eat. but i definitely feel better since i eat almost raw and enjoy my non-vegetarian treats once in a while. its all about the balance ;-) tell me more about yourself! are u working for saveur? where are you living? all the best and keep in touch!!!!
